Ingredients

Chicken Broth

1 Chicken (Alternatively, you can use chicken thighs or chicken breast)

1 Lemongrass

Add salt to taste

Add chicken stock/powder to taste

Noodles

16 oz. 1 package of rice flour

16 oz. 1 package of topical starch

5 cup Hot boiling water

Garnishes

Shredded chicken

Chopped green onions

Chopped cilantro

Add fish sauce to taste

Add fried garlic to taste

Add chili oil to taste

Add lime to taste

Directions

Chicken Broth

1Place chicken in a pot, add enough water to cover by 2 inches. Bring to a boil over medium-high heat, reduce to a simmer, and cook until the chicken is cooked through.

2When chicken is cooked, remove from the pot. Shred with a fork. Set aside.

Noodles

1Mix together one pack of rice flour and one package of tapioca starch.

22. Slowly add water to the mixture and stir.

3Kneed the dough for several minutes.

4Rest and cover dough for 30 minutes.

5Dust a rolling pin. Break the dough into smaller balls and roll them out.

6Cut into 1/4 inch noodles. Dust the noodles with topics starch to prevent them from sticking to each other.

7The noodles can be cooked directly in boiling chicken broth. Alternatively, the noodles can be cooked in a pot of boiled water, strained and then placed in individual bowls.

I used 5 cups of boiling water like u said… my dough is watered down like pancake mix! What the heck
